This healthy mango black bean quinoa salad with avocado will be your favourite easy lunch or summer salad to bring to parties. Dressed with a yummy honey chipotle lime dressing for vibrant, bright flavour. It stays good in the fridge for days and can be made ahead of time.

Ingredients:
For the quinoa:
3/4 cup of uncooked quinoa
1 1/2 cups water

For the salad:
1 425g can of black beans
1 large mango diced
1 red bell pepper diced
1 avocado diced
1 jalapeno, seeded & diced (optional)
1/2 cup of fresh coriander
1/4 cup of red onion diced

For the honey lime chipotle dressing:
2 tbsp olive oil
2 tbsp freshly squeezed lime juice
1 tbsp honey
1 tsp dijon mustard
1/2 tsp chipotle chilli powder plus more if you like more spice
1 clove minced garlic
1/2 tsp salt
freshly ground pepper

Add water and quinoa to a medium pot and place on a high heat. Bring to the boil, then cover, reduce to low heat and cook for exactly 15 minutes. Remove pot from heat, fluff quinoa with a fork.

While the quinoa is cooking, chop all the fruits and veggies. Once done, add them all to a large bowl along with the cooked quinoa.

In a separate small bowl, whisk together the ingredients for the dressing: olive oil, fresh lime juice, honey, dijon, chipotle chilli powder, garlic, salt & pepper.

Pour dressing all over the quinoa salad and toss to combine. Garnish with extra fresh coriander if desired.  Serve at room temperature or cold, will stay good for 4-5 days in the fridge. Serves 4.

Enjoy!

Autophagy... what is it?
Autophagy... what is it?

Autophagy, meaning “self-eating,” is an intracellular degradation process that allows cells to recycle damaged intracellular components to generate energy and provide building blocks to create new cellular structures.

In simpler terms, it is a process that keeps your body's cells in proper balance by taking old or damaged parts of a cell and recycling them. These recycled bits and bobs are turned into amino acids that can be used for fuel and more.
